Easy Homemade Chicken Soup

I put on a pot of chicken soup last night and let it simmer for almost 3 hours. To make it nutrient rich, I added onion, garlic, leek, carrots, celery, potatoes, sweet potato, and kombu. I also threw in some peppercorns, bay leaves and allspice berries. This recipe is from Rebecca Katz's Cancer Fighting Kitchen. It's basically her Magic Mineral Broth plus chicken.
Now that I had my chicken soup base, I could make almost any soup I wanted.
Easy Chicken Soup with Pasta
6 cups chicken broth
2 carrots, diced
1 celery stalk, diced
1/4 cup chopped onion
1 cup cooked chicken breast, diced
1 cup cooked pasta (I used whole wheat Israeli couscous, but any small pasta will do)
1/2 teaspoon dried thyme
salt and pepper to taste
Put broth, vegetables and thyme in pot and simmer 15-20 minutes, until vegetables are tender. Add chicken, pasta, salt and pepper to taste.
