Whole Grain Chocolate Chip Banana Muffins

I buy bunches and bunches of bananas for smoothies every week, a breakfast staple during the school year. Sometimes, I buy extra bananas just so I'll have enough to make banana bread or these Whole Grain Banana Chocolate Chip Muffins as a special breakfast treat or after-school snack.

A Tribute To My Father-In-Law

My dear, sweet father-in-law, Paul.
I am dedicating this post to my 93-year old father-in-law, Paul, who just passed away this week. Paul immigrated to the United States in 1951, where he received his Master's degree in engineering from the University of Michigan and his PhD from Columbia University. He was a devoted husband, and was married to my mother-in-law for 50 years before her passing 4 years ago. Not only was he an extremely intelligent man, but one of the dearest, most loving men I have ever known.

Traveling with Food Allergies

We've had a long cold winter, can't wait for all this snow and ice to melt!
Last Wednesday, I decided I just couldn’t take the snow and ice anymore. I needed to escape to warmer weather, to get some sunshine, and take a break from the dirty snow banks lining the street, as well as the damage from a burst water pipe and ice dam from all the snow (nope, none of the repairs have been done yet!).

Food Allergies: What To Eat When You Can't Eat Anything

For the past several months, I've been struggling to figure out what's been ailing my youngest son, "A". A vibrant, active boy at 8 years old, and the healthiest eater out of all my kids, "A" suddenly started suffering severe abdominal pains and fatigue, and recently has been found to be allergic to at least 28 environmental/food categories. What caused this to happen all of a sudden? I have no idea. My best guess at this point is that the two bouts of antibiotics he was on last spring killed all the good bacteria in his gastrointestinal system, and bad bacteria grew in its place.  This imbalance has caused all sorts of havoc on his poor little body.
