Soothing Smoothies {Mango Coconut Smoothie}

My poor friend "B" is suffering from mouth sores, just over a week after her 1st chemo treatment.  Chemo can cause a number of unpleasant side effects, including a sore mouth and trouble swallowing.  That's why smoothies are great -- they're soothing, smooth, nutritious, and go down easy.


The National Cancer Institute puts out a booklet "Eating Hints Before, During and After Cancer Treatment" (www.cancer.gov) which suggests a number of ways to deal with sore mouth symptoms, including eating cold or room-temperature food, choosing soft foods, sucking on ice chips, and avoiding certain foods such as citrus fruits/juices, spicy foods, tomato based foods, crunchy foods, salty foods and raw vegetables.

Since it's so hot out, I decided to make a Mango Coconut Smoothie and Papaya Banana Smoothie for "B", along with a Mango Cantaloupe Sorbet and Frozen Watermelon Drops.

Here's my recipe for the Mango Coconut Smoothie, a modified version of the kitchn's Mango Yogurt Smoothie:

Mango Coconut Smoothie

1 fresh mango, cut up
1/4 cup coconut yogurt (or soy yogurt) 
1/2 banana
1 T light coconut milk
1/2 cup almond milk
a couple of ice cubes

Blend it all up and serve.  Will keep in the fridge 2 days.
