Super Sauces - Spinach Basil Pesto and Roasted Red Pepper Sauce

My two "Super Sauces" are Spinach Basil Pesto and Roasted Red Pepper Sauce 
Since my youngest is currently allergic to tomatoes, I've had to come up with alternative sauces to stand in for the tomato sauce I used to serve over his pasta and meatballs. Also, now that he's on a gluten-free diet, I've been making personal pizzas at home using gluten-free crusts and a few "Super Sauces."

We've had a long cold winter, can't wait for all this snow and ice to melt!
Last Wednesday, I decided I just couldn’t take the snow and ice anymore. I needed to escape to warmer weather, to get some sunshine, and take a break from the dirty snow banks lining the street, as well as the damage from a burst water pipe and ice dam from all the snow (nope, none of the repairs have been done yet!).

Cuban Black Bean Soup
Today, I will be teaching the third in a series of soup classes to a group of seniors at our local community center. As I mentioned in an earlier post, the purpose of this soup series is to encourage seniors to cook more at home, rather than buy processed and artificial foods, which tend to be high in sodium and additives, and are often not as healthful as foods that can be prepared easily at home.

Yesterday, I posted a summary of the 2010 Federal Dietary Guidelines for Americans. As I mentioned, the 2010 Dietary Guidelines consist of 5 chapters detailing recommendations based on scientific evidence for nutritional factors that are important for promoting health and lowering the risk of diet-related chronic disease.
